Jägerwirt Scheffau
Der Jägerwirt liegt über dem kleinen Dorfzentrum von Scheffau. Eine kurze, kurvige Waldstrecke trennt das Dorf vom einsam gelegenen Wirtshaus. Die Distanz, sonnige Lage und Ruhe unterhalb des Gebirgsstocks vom Wilden Kaiser tun gut. Hier ist man dem Alltag entkommen. Ein typisches Tiroler Haus, das sich in die Landschaft einfügt. Eigentlich fast unspektakulär.
Die beiden jungen Wirtsleute sind experimentierfreudig und neugierig. Die Kombination aus heimischen Lebensmitteln und internationaler Gesinnung funktioniert sehr gut. Wenn beispielsweise eine Süß-Sauer-Sauce für zwei Tage am Herd brodelt, um sie mit Fleisch vom Kitzbüheler Metzger zu verbinden, steigt die Spannung wie es dann schmeckt, meint Küchenchef Andreas Salvenmoser.
Wegen dieser Besonderheiten, der Abwechslung und der ehrlichen Gastfreundschaft ist das Restaurant über die Region hinaus bekannt geworden. So durften Andreas und Martin vor kurzem sogar Tina Turner begrüßen, die auf Empfehlung vorbeikam und sich durch die Karte probierte. Martin Salvenmoser schwenkt aber gleich ein und betont, dass sie kein Promilokal sein wollen.
Weil Martin und Andreas die Ideen nicht ausgehen, haben sie vor drei Jahren noch einen Genussladen im Dorfzentrum von Scheffau gegründet. Dort verkaufen sie neben selbstgemachtem Bauernbrot und Chili-Hirschwürsten auch die Produkte ihrer Lieblings-Lieferanten: Camembert aus Hopfgarten, Tee aus Hamburg oder Schokolade nach Jägerwirt-Rezeptur aus Osttirol. Und dann haben die beiden kürzlich noch eine Bar in einem 400 Jahre alten Bauernhaus in Scheffau eröffnet. Aber das ist eine andere Geschichte.
